Halloween Dinner – Noodle Brain Soup

For many years at Batter Up Kids Cooking School we taught the kids to make a simple soup for Halloween that always had the kids squealing and laughing, but also eating it up! It is called Noodle Brain Soup and is made with a base of ramen noodles. Try this for your Halloween party on Friday. It’s easy to put together, inexpensive and a favorite for kids of all ages. Here is the recipe… Bone appetit!

Noodle Brain Soup
Serves 8
Ingredients
4 packages vegetable or chicken-flavored ramen noodles
2 cups cooked and shredded chicken
1 cup fresh carrots, grated
4 scallions, thinly sliced
1 red bell pepper, diced

Let’s start Cooking!
1.In a large cook pot combine and cook all 4 packets of ramen noodles according to directions. Add the rest of ingredients and stir to blend. Heat through.
2.Serve in a hollowed-out pumpkin shell or a plastic food-safe Halloween witch’s cauldron.
Kids Cooking Shop Kitchen Tips
1. After the cooked chicken is cooled, kids can have great fun shredding the chicken with their fingers!
2. Let the kids help grate the carrots and chop the red bell pepper with a safety knife or heavy duty plastic picnic knife prior to adding to soup.
3. For a great kid-friendly vegetarian soup, substitute tofu for chicken.

Oh Happy Foodie Day!

I finally have a day to cook and “chill” in the kitchen and it is a beautiful Fall-like morning. Although it is almost Halloween…I am ready for Thanksgiving and some turkey and dressing. Tonight though I am going to make a Tyler Florence chicken and dumplings meal sort of like my mom used to make—she was a GREAT cook. And dumplings are a really easy and fun food for kids to make too—they are magic-like in the way they cook in the chicken stock as they turn from mush into a fluffy delicious bite of heaven!!
